Breakfast Noodles
This original recipe is the result of wanting noodles and breakfast for dinner.
INGREDIENTS
2 portions fresh or frozen udon noodles
½ yellow onion, finely chopped
3 slices bacon, sliced into small pieces
½ tube breakfast sausage (about 4–5 oz)
2 cloves garlic, minced
1 tsp fresh ginger, grated or finely minced
2 tbsp soy sauce
1 tbsp rice vinegar
1 tsp hot honey
1 tsp sesame oil
For Serving
Sliced scallions
Chili crisp
Crispy fried hash browns
fried egg

INSTRUCTIONS
Cook the Udon
Bring a pot of water to a boil.
Cook udon according to package instructions until just tender.
Drain and set aside
Add chopped onion to the skillet and sauté until soft and lightly golden,
Heat a large skillet over medium heat.
Add bacon pieces and cook until fat renders and bacon is lightly crisp.
Add breakfast sausage to the bacon fat.
Cook, breaking it up with a spoon, until browned and cooked through.
Add drained udon noodles to the skillet.
Combine soy sauce, rice vinegar, hot honey, sesame oil, ginger and garlic and toss to mix.
Toss everything together over medium heat until noodles are well coated.
Add a splash of reserved noodle water if needed to loosen the sauce.
Plate & top with crispy hash browns, a fried egg, scallions, and chili crisp.
